Turmeric-Roasted Cauliflower

 

3 tbs olive oil                                                 1/2 tsp pepper

1 1/2 tsp ground turmeric                           2 cloves garlic, minced

   1/2 tsp ground cumin                               6 - 8 c cauliflower florets (1 head)

   1/2 tsp salt                                                   1 - 2 tsp lemon juice

Preheat oven to 425.  Whisk oil, ground turmeric, ground cumin, salt, pepper and garlic in a large bowl.  Add cauliflower and toss to coat.  Transfer to a baking sheet and arrange in a single layer.  Roast, stirring once, until browned and tender (about 15-20 minutes.)  Drizzle lemon juice over cauliflower and serve.

 

                        Indian-Style Cauliflower

 

2 tbs olive oil                                                 1/2 tsp salt

1 tsp coriander seeds                                   1/2 tsp pepper

1 tsp cumin seeds                                         6 -8 c cauliflower florets (1 head)

1 tsp curry powder                                       1 tsp finely grated fresh ginger

1 tsp ground turmeric                                 1 tsp finely grated lime zest                    

Preheat oven to 450.  Whisk oil, coriander seeds, cumin seeds, curry powder, ground turmeric, salt and pepper in a large bowl.  Add cauliflower and toss to coat.  Transfer to a baking sheet and arrange in a single layer.  Roast until browned and tender (about 10-15 minutes.)  Sprinkle ginger and lime zest over the cauliflower and serve.
